Baked Turkey Meatballs
Growing up, my Mom was always trying out different meatball recipes until she found one that was the fam favorite. I decided to try making my own using similar ingredients and substituting beef for ground turkey. Check out the recipe below!
Ingredients:
1/3 cup grated parmesan cheese
1/3 cup 100% Whole Wheat seasoned bread crumbs (I use 4C brand)
3 tablespoons finely chopped fresh parsley
2 garlic cloves, minced
½ teaspoon onion powder
½ teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Pinch red pepper flakes (optional)
1 large egg
1 pound 93% ground turkey or lean ground chicken
2 tablespoons extra-virgin olive oil
Directions:
1. Preheat oven to 400 degrees. Line a baking sheet with non-stick foil or foil and spray with non-stick spray.
2. In a large mixing bowl, combine cheese, breadcrumbs, parsley, garlic, onion, oregano, salt, pepper, and red paper flakes (optional). Beat the egg in a small bowl. Add turkey and egg to the large mixing bowl.
3. Using a spatula or your hands, mix until combined. Shape the meat mixture into about 1 ¼ inches in diameter meatballs. Arrange on the baking sheet. You should have about 20 meatballs.
4. Brush extra-virgin olive oil on meatballs
5. Bake until the internal temperature of the meatballs reaches 165 degrees, about 15-20 minutes.
I like to eat these turkey meatballs with a no sugar added tomato sauce and edamame spaghetti. You can also try them with a low sodium brown gravy and roasted broccoli!
