Fresh & Healthy Texas Caviar
This Texas Caviar recipe (or Cowboy Caviar) is a great dip to bring to barbecues, a side dish with at meals, or even on top of a salad or a piece of fish or meat. Give it a try!
Texas Caviar
1 can black beans, drained
1 can pink beans, drained
1 can black eyed peas, drained
1 small can of corn
1 red pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
1 small red onion, diced
1/4 cup olive oil
1/2 cup apple cider vinegar
Add all of the ingredients to a large bowl. Sprinkle with small amount of sugar (~1 tablespoon) and stir. Cover and refrigerate for at least 4 hours (tastes best overnight). Enjoy!
